Dinner in under 30 minutes
Speed in a kitchen is not a list of quick recipes. It is heat management, the shape you cut things into, and a pantry that lets you start without a shopping trip. The technique, with real timings, plus eight dishes that land inside half an hour.
What actually makes a dinner fast
Two variables decide how long dinner takes, and you set both before any recipe begins: how much heat you can push into the pan, and how thick the food in it is.
Thickness dominates: heat travels from surface to centre, and that journey scales roughly with the square of the distance. A 4 cm chunk of chicken and a 1.5 cm cutlet from the same breast are two different ingredients, one needing twenty minutes and a rest, the other six. Count the chopping, too: a twenty-minute recipe that opens with two diced onions is a forty-minute recipe.
Get the pan hot before anything touches it
Food dropped into a cold pan releases its water onto a cool surface and steams grey instead of browning. Preheat stainless or carbon steel empty for two to three minutes over medium-high, then flick in a few drops of water: hissing means not yet, beading and skating means the pan is near 180 °C (350 °F). Add the oil then, and never heat an empty non-stick pan above medium.
Dry the food. Browning starts around 140 °C (285 °F) and surface water must boil off at 100 °C first, so thirty seconds with kitchen paper buys both time and a better crust.
The commonest cause of a slow weeknight dinner is a crowded pan. Packed edge to edge, pieces dump moisture faster than it evaporates and the pan temperature collapses. Leave a finger's width and cook in two batches: three minutes spent, ten saved.
Cut for surface area
Knife work is the cheapest speed you will ever buy. Butterfly a chicken breast through its equator and you have two cutlets that take three minutes a side instead of twenty. Thinly sliced onion softens in four minutes rather than ten, carrot is faster grated than diced, broccoli stems split lengthways finish with the tops. Uniformity beats fineness: equal pieces finish together, so you can set a timer.
Run two tracks at once
Turn the oven on and put the water on before you open the fridge. Four litres boils in eight to ten minutes with the lid on; an oven reaches 220 °C (425 °F) in twelve to fifteen. Both are minutes you were going to spend chopping. Fill the pot from the kettle and halve the wait again.
Order the rest by what takes longest and needs least attention: roasting first, grains and pasta next, pan work last, since it is the only part that punishes you for looking away. Salt the water at 8 to 10 g per litre and keep a mug back.
Which proteins cook in under ten minutes
Fast dinners are built on a short list of proteins: eggs, raw prawns, thin cutlets, minced meat and firm tofu. Anything with connective tissue to melt, or a bone to conduct heat inwards, belongs to a different evening.

The ones that will never be quick: bone-in thighs need thirty-five to forty minutes, beef shin wants hours, dried pulses need soaking. The workaround is tinned, a drained tin of chickpeas or black beans is a cooked pulse that only needs flavour.
One pan, and the sauce lives in the fond
The brown film left after searing is called fond: proteins and sugars browned onto the metal, and washing it down the sink is throwing dinner away. Take the protein out, drop the heat, add an aromatic for thirty seconds, then pour in about 100 ml of liquid while the pan is hot and scrape hard. Reduce by half over two or three minutes and finish off the heat with butter, cream or coconut milk. Black fond tastes acrid; deglaze earlier next time.
One-pan chicken thighs with lemon is the demonstration. Boneless thighs skin down in a dry hot pan, eight minutes untouched, four on the second side, out to rest. Pour off the fat, add sliced garlic and a strip of lemon peel, then wine or stock. Scrape, reduce, squeeze in half a lemon, swirl in butter off the heat, return the thighs.
Five-ingredient formulas, not recipes
Almost every fast dinner is the same equation: a fat, an aromatic, a protein, a liquid, and an acid at the end. Learn the shape and you stop needing recipes.
- Garlic and chilli spaghetti (aglio e olio), olive oil, sliced garlic and dried chilli, starchy pasta water, lemon. Take the garlic from cold oil to pale gold over four minutes; browned garlic is bitter.
- Quick puttanesca, olive oil, garlic with two anchovy fillets and chilli, tinned tomatoes with olives and capers, caper brine. The anchovies melt in a minute and do the work of an hour of simmering.
- Prawn and coconut curry, coconut oil, ginger and curry paste, raw prawns, coconut milk, lime. Fry the paste a full minute before the liquid or the sauce tastes powdery.
- Egg fried rice, neutral oil, spring onion, eggs, cold rice with soy sauce, rice vinegar. The rice must be cold and dry; warm rice steams and clumps. Eight minutes.
- Shakshuka, olive oil, onion with cumin and smoked paprika, eggs, tinned tomatoes, lemon. Reduce the tomato for twelve minutes until it holds a well, then cover the eggs six to eight.
- Miso-glazed salmon, white miso, mirin and a teaspoon of sugar, grilled 15 cm from the element for five to six minutes. Stay in the room.
- Black bean quesadillas, oil, onion and cumin, a tin of black beans mashed with their liquid, cheese, lime, pickled jalapeño.

The pantry that makes speed possible
A fast dinner is mostly a shopping decision you made a fortnight ago. Seven things earn their shelf space because each replaces a slow step:
- Tinned tomatoes. Whole plum, crushed by hand; chopped ones are firmed with calcium and stay in cubes.
- Anchovies in oil. Not a fish flavour once melted, a savoury one. Two fillets do a whole pan.
- Miso. Depth in glazes and dressings; stir it in off the boil.
- Dried pasta. Ten minutes unattended, and the water is a sauce ingredient.
- Coconut milk. Full fat: a tin and a spoon of paste is a curry base with no reduction time.
- Stock paste. Turns tap water into a deglazing liquid.
- Frozen peas. Better frozen than tired-fresh, ninety seconds from the bag.

Finish with acid or something fresh
Fast food tastes flat because it has had no time to build layers, and acid is the shortcut. Lemon, vinegar or pickle liquid, off the heat in the last thirty seconds, makes a fifteen-minute sauce taste considered. Acid boiled from the start loses its aromatics and can toughen pulses.
Herbs and raw alliums do the same for smell and texture: torn parsley, sliced spring onion, chilli oil, toasted seeds. Then choose between salt and acid, because what reads as needing salt usually needs lemon.

What is the fastest dinner I can make from a bare cupboard?
Garlic and chilli spaghetti. Dried pasta, olive oil, garlic and dried chilli are all shelf-stable, and the sauce is made from the pasta water. It takes about twelve minutes, and roughly ten of those are the water coming to the boil.
Why does my chicken go grey and watery in the pan?
Three causes, usually together: the pan was not hot enough before the chicken went in, the surface of the meat was wet, and the pan was crowded. Preheat for two to three minutes, pat the meat dry with kitchen paper, and cook in two batches with space between the pieces.
Can I cook frozen prawns straight from the freezer?
Thaw them first, or they will release water and poach rather than sear. The fast method is a bowl of cold water for five to ten minutes, then drain them and pat them thoroughly dry. Raw prawns then need only two to three minutes in the pan.
Is it worth buying pre-chopped vegetables?
For onions, garlic and herbs, no; they oxidise and taste dull, and the knife work is under two minutes. For genuinely slow prep such as butternut squash, shredded cabbage or trimmed green beans, the bagged version buys you real time and loses very little.
How do I get a sauce without a separate saucepan?

For anything flat and spread out, yes. A tray at 220 C (425 F) cooks food on both sides at once with no stirring, which frees you to make everything else. Switch it on before you start prepping, since it needs twelve to fifteen minutes to get there.
